GreenVale Recipes With a Twist

Having the tastiest, freshest all rounder in your home is the first step to a perfect meal. However, if you would like to try something a little bit different, here are some delicious recipes with a twist.

Rich Roasts

Rich Roasted

The good old traditional way of serving potatoes to complement any of your favourite dishes!

Recommended Serving

Serves 4

Ingredients

  • 8 medium sized GreenVale Farm Fresh potatoes
  • Splash of Olive oil

Method

  1. Use even-sized potatoes and peel thinly. Rinse them under cold water and pat them dry with a clean cloth or kitchen paper.
  2. Part-boil the potatoes in boiling salted water for 10 minutes.
  3. Drain well and score the surface of the potatoes with a fork.
  4. Use a splash of oil in a roasting tin, and preheat in the oven at 220°C/425°F/Gas Mark 7.
  5. Place the potatoes, in the roasting tin, and toss to lightly coat with the oil.
  6. Roast uncovered for 45 minutes, turning the potatoes over once or twice during cooking.
  7. This method of roasting gives your GreenVale potatoes a crisp surface, and a fluffy centre.
Wedges

Wedges

Crispy, chunky chips with fresh rosemary.

Recommended serving

Serves 4

Ingredients

  • 750g GreenVale potatoes (about 3 medium large)
  • Olive oil, for drizzling
  • 2tbsp rosemary leaves

Method

  1. Cut GreenVale Farm Fresh Potatoes into 1" thick wedges with the skin left on for flavour.
  2. Blanche wedges in boiling water for 5 mins.
  3. Drain wedges and gently place on a baking tray.
  4. Coat with a drizzle of olive oil.
  5. Finish by scattering some fresh rosemary over the wedges.
  6. Bake at 220°C for 30 mins or until crisp.
  7. Season to taste.
Mashed

Smashing Mash

With Parsley and Horseradish.

Recommended serving

Serves 4

Ingredients

  • 1kg GreenVale Farm Fresh Potatoes, peeled and cut in chunks
  • 115g / 4oz unsalted butter
  • About 100ml / 3 fl. oz warm to hot milk
  • A handful of roughly chopped parsley
  • 2 Tbsp of creamed or grated horseradish

Method

  1. Cover the potatoes with cold water and gently bring to the boil.
  2. Reduce heat and simmer until tender.
  3. Drain the potatoes in a colander and then return the pan.
  4. Add the butter and milk, then mash with a traditional masher.
  5. With a wooden spoon, gradually fold in the horseradish and parsley.
  6. Season to taste.
  7. Perfect served with fish, beef or just a nice fried egg over the top!
Baked

Beautifully Baked

A simple yet flavoursome way to prepare your potato.

Recommended Serving

Ingredients

  • 1 GreenVale Farm Fresh Potato
  • Ground paprika
  • Seasoning to taste

Method

  1. Clean and rinse the potato.
  2. Place it on a baking tray and pierce with a fork.
  3. Dust lightly with desired seasoning and paprika soon after (that way you get a crisp and savoury skin with a smokey flavor).
  4. Bake at 200°C/gas mark 6, until the skin is crisp (This will take around an hour for a medium-sized 400g potato).
  5. The potato is done when you can firmly apply pressure to the potato to leave a dip.
  6. If you prefer, test with a fork, which should easily pierce the potato if cooked through. The longer you keep the cooked potato warm the softer its skin will get.

  2. It's all French to me. Pomme de terre is French for potato. A pomme is an apple and a pomme de terre is an apple of the ground.
  3. How many potatoes do you eat a year? National statistics show that, on average, each person will have tucked into 103kg – that’s 500 medium sized spuds each!
  4. In 1995 Potatoes were taken into space by the shuttle Columbia. This was the first time food had ever been grown in space.
  5. Frederick Lord Woolton, Minister of Food, may be remembered as the most popular govt. minister ever. During WW2 he declared that fish & chips was the only food not to be rationed.
  6. The world's biggest potato was grown in Germany in 1997 weighing in at 3.2kg. That's the same weight as a small dog.
